Mat, formally of the Chelsea Café restaurant, has notched up two City & County of Swansea Gold Welsh food hygiene awards. Plus he had the distinction of being one of only four Swansea restaurants that had been featured in the Time out eating and drinking in Great Britain magazine, along with luminaries like Gordon Ramsey and Raymond Blanc. Mat describes his food as French European, and states ‘I would say that my cooking is ingredient driven cuisine, with a strong use of local delicacies and produce, that puts the emphasis on flavour, with an imaginative and original twist. Bay Bistro– Mats culinary skills also extends to our Bay Bistro, which offers a selection of bar meals throughout the day, that start from just £3.95. A wide selection of beer, wines and spirits can be found in our Bistro, a relaxed and welcoming bar. Cove Piano Bar – Looking for something a little bit more stylish?, then try our residents lounge, with its extensive wine cellar, exclusive cocktails, and finest lagers and spirits.
